Use recipe for Al Pastor at, pickled red onion recipe at Closet Cooking.
  • 3 Mexican style torta rolls
  • Guacamole
  • ¼ white onion, finely chopped
  • Cilantro
  • Al Pastor Pork
  • Pickled red onions
  • Shredded lettuce
  • Sour Cream
  1. Make the Al Pastor pork and pickled red onions. Toss cilantro and onion together.
  2. Toast the rolls.
  3. Assembly: Spread Guacamole on bottom roll, then onion and cilantro mix, then pork, then pickled red onions, then lettuce, then sour cream, then top half of roll.
The order of layers is just so the sandwich holds together as much as possible. Adding pineapple to the toppings would also be very good.

There is one Hispanic bakery in town, but I am much too lazy to drive there to get rolls. Too bad, because I had to make do with Kaiser rolls that looked vaguely like torta rolls. Nevertheless, this was a fantastic torta. The pineapple in the al pastor recipe is an excellent addition.
