Cheap Quickies: Zatarain's Dirty Rice

  • BARE ESSENTIALS ---------------------------------------
  • 2 tablespoons oil
  • 1.5 tablespoons flour
  • ½ onion, chopped fine
  • ½ tablespoon minced garlic
  • 1 package Zatarain's® Dirty Rice Mix, regular size, not family size
  • 1 lb mixed andouille sausage, ground beef, shrimp, whatever you prefer. Recommend equal parts all. Chicken is also fine.
  • 2¼ cups chicken broth
  • OPTIONAL ----------------------------------------------
  • 1 rib celery, minced
  • ¼ cup minced bell pepper
  • ½ pound chicken or duck livers, minced
  • ½ cup chopped green onion
  • Cilantro, to garnish
  1. Make a dark roux by mixing oil and flour in heavy bottomed 6 to 8-quart sauce pot or dutch oven over low heat. Stir constantly using wooden spoon until brown.
  2. When roux is finished, stir in onion and ground beef and brown the meat. Add andouille celery, bell pepper and garlic. Add Rice Mix and stir for 5 minutes to toast rice. If including chicken/duck livers, add livers and stir for an additional 4 minutes
  3. Stir in broth, allow mixture to come to a boil. Cover with lid and simmer over low heat for 25 minutes. Add shrimp in the last 10 min of cooking.
  4. Sprinkle with green onion and cilantro just before serving.
I like ⅓ lb each of ground beef, andouille, and shrimp in this. Bacon can also be used, crisped as the first step, and the bacon fat used to make the roux.


Making a roux instead of just following the instructions on the box adds a surprising amount of flavor and depth to this dirty rice mix. This is a very tasty one pot meal, and good for using up spare ingredients. It will work with most proteins.
