Couple of years ago I bought sister number K this baking cookbook for Christmas. It looked cool and I figured I could mooch recipes off of it, because that’s how Christmas gifts are supposed to work right? Over the past couple of years we’ve collectively made about five or six recipes from this book. Just for your information, as a cookbook, it’s not very good. Almost everything came out on the dry side and we’re not amateurs. It’s got some really good ideas and pictures though.
The Mississippi Mud Pie recipe is the only one so far that’s any good, and it’s pretty great actually.
It consists of an Oreo cookie crust, a flourless chocolate cake, topped with chocolate pudding. The pudding layer is supposed to be about twice as thick as the 1/2 inch layer I put on, but even though my pudding is damn good in the grand scheme of pudding, I’m really not that fond of pudding. The cookie crust is supposed to extend up the sides of the cake, but I’m proclaiming that it’s impossible to do that without special equipment. I just got my bottom layer nice and even and thin, and that’s good enough for me. I wouldn’t change a thing.
